Split pea soup is a hearty and flavorful soup made with dried green split peas, vegetables, and a protein such as ham or bacon. It is typically seasoned with herbs and spices such as thyme, black pepper, and salt. The ingredients are simmered together in a pot or Dutch oven until the peas are tender and the soup has thickened, resulting in a creamy, protein-rich dish that is perfect for a cold day. Ingredients

  • 1 pound dried green split peas, rinsed and picked over
  • 1 large onion, diced
  • 3 carrots, peeled and diced
  • 3 stalks of celery, diced
  • 2 cloves garlic, minced
  • 1 ham hock
  • 1 bay leaf
  • 1 tsp dried thyme
  • 6 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the split peas, onion, carrots, celery, garlic, ham hock, bay leaf, and thyme. Pour in the chicken broth and add enough water to cover the ingredients by 1 inch.
  2. Bring the soup to a boil, then reduce the heat to low and simmer, uncovered, until the split peas are tender, about 1 1/2 to 2 hours.
  3. Remove the ham hock from the pot and let it cool slightly. Remove the meat from the bone and dice it into small pieces. Return the meat to the pot.
  4. Remove the bay leaf and discard it. Use an immersion blender to puree the soup until it reaches your desired consistency. Alternatively, you can let the soup cool slightly and blend it in a blender or food processor.
  5. Season the soup with salt and pepper to taste. Serve hot.

Notes

  • You can also add diced potatoes, diced ham, or chopped spinach to the soup for added flavor and texture.
  • If you don’t have a ham hock, you can use diced ham or bacon instead.
  • This soup freezes well, so feel free to make a large batch and save some for later.
