This roasted vegetable salad is a flavorful and healthy option for a side dish or main course. The vegetables are roasted to perfection, creating a savory and slightly caramelized flavor. The salad is then dressed with a simple vinaigrette, adding a bright and tangy contrast to the vegetables.

You will need the following ingredients for the roasted vegetables:

  • 2 medium zucchini, diced
  • 2 medium summer squash, diced
  • 1 red bell pepper, seeded and diced
  • 1 yellow bell pepper, seeded and diced
  • 1 red onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste

For the vinaigrette:

  • 2 tablespoons of red wine vinegar
  • 1/4 cup of olive oil
  • 1 tablespoon of Dijon mustard
  • 1 clove of garlic, minced
  • Salt and pepper, to taste

Preheat your oven to 400 degrees Fahrenheit. In a large mixing bowl, combine the diced zucchini, summer squash, bell peppers, red onion, and minced garlic. Drizzle the olive oil over the vegetables and season with salt and pepper. Toss the vegetables to evenly coat them in the oil and seasonings.

Spread the vegetables out in a single layer on a baking sheet. Roast the vegetables in the preheated oven for 20-25 minutes, or until they are tender and starting to caramelize around the edges.

While the vegetables are roasting, prepare the vinaigrette. In a small mixing bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, minced garlic, salt, and pepper.

Once the vegetables are done roasting, remove them from the oven and allow them to cool for a few minutes. In a large serving bowl, combine the roasted vegetables and the vinaigrette. Toss the vegetables to evenly coat them in the vinaigrette.
